A light dinner

I purchased this book at my weight watchers meeting and made several good meals from it. 

 

I made this tonight and it was really good. I will definitely be making it again and again.  You can’t buy anything like this in restaurants around here.  The best part is you know what you are eating, no hidden calories.  

 

Here is the recipe. 

Pasta Salad with Apple and Chicken 

Serves 4 with 6 points each 

1/3 cup orange juice 

3 Tbsp balsamic vinegar 

1 Tbsp Dijon mustard 

1 Tbsp maple syrup 

3 cups cooked whole-wheat penne 

1 cup diced cooked chicken breast 

1/4 cup pecans 

1 small granny smith apple, cored and chopped 

1 large shallot, finely chopped. ( I substituted green onion) 

1 150g (5 oz) bag arugula ( I used mixed greens, baby spinach would be nice too) 

1. To make the dressing, whisk together the orange juice, vinegar, mustard, and maple syrup in a large bowl. 

2. Add the pasta, chicken , pecans, apple and shallot to the dressing; toss to coat.  

3. Divide the arugula evenly among 4 plates.  Spoon the pasta salad evenly on top.
